first course:

smoked trout with rye crumbs, oyster and trout roe sauce

 

second course:

heirloom grains with caramelized salsify, oyster mushrooms and black truffle

 

third course:

seared ahi with dungeness crab, pink lady apple and yuzu

OR

strip loin with creamed arugula, smoked beets and roasted bone marrow

 

dessert:

chocolate malted mousse cake with candied cocoa nibs and espresso granita
